In love with bio-diversity and traditions, not hesitating to be considered as originals in the eyes of their neighbours, they vilified their wines with indigenous yeasts, raised them on the lees, and until their retirement distilled their production at medium of a small still heated by fire wood.
Amber dress. On the nose, notes both mineral and rancid, with a floral touch, narcissus, daffodil. There is amplitude, slight waxed and tertiary notes emerge. On the palate, the attack is lively, frank, the mineral side of the Borderies expresses itself fully, with even a flinty side. Aromatic power, but well balanced, there is no burning to sting. The first rancios are present, they give relief to this cognac, and almost a smoked side. The floral notes return in retroaction. The final is long, the pastry side of youth is gone. So greedy. A beautiful cognac.
