Habitation SAINT-ETIENNE was one of the main Martinique's sugar factories during the 19th century. Converted as other sugar factories into a rhum agricole distillery at the end of the 19th century, its distillery activities were ended in 1988. Rum is since distilled at the Simon distillery not far from the Francois village. Blending, maturing and barrel ageing activities are still conducted at Habitation Saint-Etienne domain. The AOC Rhum Agricole de la Martinique restricts production to the short best season for the cane to pack aromas, compels that all and only the fresh juice of the cane be used, contrary to 95% of the world rums using the left-overs (Molasses, stalks) of the sugar refining industry. Agricole Rum belongs to the world of cognac or Armagnac, whenever Traditional Rum (also known as Industrial) is in the grappa / pomace world. Habitation St Etienne is famous for its Strong Bourbon cask finish but for unusual cask finish in Islay, Pedro Jimanez, Oloroso, Sauternes
