A dam fine Gin! Plus it's from Australia! The West Winds Cutlass is bolstered by an increase in ABV to 50% to take its place amongst the new-world styles that continue to emerge. Handcrafted, small batch is the key to its delicacy.

The introduction of Australian bush tomato pairs up with an increase in coriander seed to produce a headstrong but beautifully aromatic and very drinkable gin. For the seasoned gin drinker, serve with lots of ice, a splash of premium tonic and a sliver of green capsicum! Fresh coriander root and coriander seed form the predominate spice notes. The fresh coriander is fairly unique in flavour and also provides aromatic grassy notes when used in conjunction with coriander seed. Earthy tones are achieved using more ‘traditional’ botanicals like liquorice, angelica and allspice. The choice of the fresh botanicals was key to the final profile of the gin. Local lemons and limes from Gingin in Western Australia are fresh peeled to provide the citrus component.

Within a month of launching, West Winds had already made a strong impression on the gin world, winning numerous accolades at the 2011 San Francisco International Spirit Awards. It is named “The West Winds” as a tribute to the ocean breezes used for centuries by sailors to cross the Indian Ocean from South Africa to the west coast of Australia and beyond in a search for the riches of the new world!

Recipe - The Cutlass Cocktail

• 60mL The West Winds Gin The Cutlass
• 25ml Lime juice
• 1 Heaped barspoon Marmalade
• 3 basil leaves
• Shake and strain over ice into rocks glass, basil leaf garnish
