Wendouree A.P. Birks Winery wines derive from the cool central and western areas of the Wendouree vineyard. The soils are shallow and meagre with red loam over limestone and natural cultivation practices are used. The vines are dry-land farmed. The cooler central block which has smaller berries is known for its spicy taste and firm astringent tannins. However the western sides add floral notes and a softer structure.

After Vinification, the wine ferments before maturation in around 25% new and seasoned Seguin Moreau French oak for 12 months. This is a cellaring style with fragrant dark chocolate/ cassis/ herb aromas,  strong sinewy tannins and underlying savoury oak.
