Stonegate Sauvignon Blanc 750mL

VINEYARD

The Vintage was generally mild with good rains in spring leading to minimal requirement for irrigation, good crops being set and substantial canopies which would be needed to ripen the fruit to perfection. This idyllic year has been great for aromatic varietal expression in white wines, and the absence of extreme weather allowed flavours to ripen fully. A warm early January period ensured early flavour development, which resulted in relatively early harvest.

WINEMAKING

Picked late at night to harvest the grapes as cold as possible the grapes were transported to the winery and immediately pressed using modern membrane tank presses. After cold settling the clear juice was carefully racked to cooled fermentation tanks and inoculated with selected yeasts. Cool fermentation was followed by minimal handling, filtration and bottling.
